Victoria Sponge by Jas

Ingredients:

  • 6oz Self raising flour,
  • 6oz Caster sugar,
  • 6oz Margarine (stork),
  • 3 eggs,
  • 1 tspn baking powder,
  • 1 tspn vanilla essence,

Method:

  1. Whisk in blender for 4 – 5 minutes until sugar is dissolved (liquid),
  2. Pour into two 7” sandwich tins at gas mark 4 for 25 mins. approx,
  3. Leave to cool approx 1-hour,
  4. Filling: Add raspberry jam, double cream (whisked) & strawberries,
  5. Place layers together, sprinkle icing sugar on top.
